It is designed as an elegant, stunningly original Japanese chef’s tasting counter concept where interaction between guests, chefs and sommeliers are part of the immersive dining experience. The Haiku experience will feature a 10-12 course Japanese Kaiseki inspired Omakase menu by Executive Chef Albert Diaz (formerly of Zuma, London and Miami) with curated pairings of wine, sake and champagne.
